Apple's items in Finder's right-click menu can't be removed, not in Settings and not with any Finder extension. Ocomenu serves its own menu in their place: hide Get Info, Rename, Compress, Quick Look and the rest, drag them into the order you want, and add your own items that run a script, open with an app or copy to a folder. Hold Cmd while right-clicking to get Finder's menu back for that click. Nothing is injected into Finder and SIP stays on. Free and open source.

Hi Product Hunt! macOS gives no way to remove Finder's built-in right-click items, not in Settings and not with a Finder extension. Ocomenu catches the right-click and shows a menu you put together yourself, with a settings window modelled on Finder's Customize Toolbar. Hold Cmd while right-clicking to get Finder's own menu back. macOS 14+, `brew install --cask piro0919/tap/ocomenu`. Feedback welcome!
